Prospect Jam Co. is an artisan, small-batch preserve company based in Ohio. Their mission is to inspire intentionally unique experiences through the craft of seasonal preservation while promoting creativity and collaboration. They find value in supporting our local economy and agriculture by sourcing from regional farms as well as collaborating with local small businesses. *((like Wick & Maple!))
PJco was motivated by Emily’s enchantment for the relationship between ingredients and the process of making, but it quickly became more about creating intentional experiences & connections in your homes and on your tables. She hopes that these copper-crafted preserves create experiences that spark connections and conversations within your communities, beyond toast.
I approached Emily a few weeks back to craft a small collection of cocktail recipes inspired by the Vintage Collection. This collection is an ode to old-school fragrances represented with a modern composition. As such, Emily took her modern jams + my vintage scents and crafted four cocktails that are moody, uniquely refreshing, and far from boring. Together, we'll be sharing the recipes + corresponding candles below!
VINTAGE I : feat. PJco Rhubarb Preserves with Cocchi Americano Rosa
2oz Four Peel Gin
1.5oz Matcha Tea, @potionmatchabar
.75oz Fresh Lemon Juice
1.5 heaping spoonful or .75oz PJco Rhubarb Jam with Cocchi Americano Rosa
Brew matcha. Whisk together roughly 2 grams matcha (or two bamboo chashaku spoonfuls) and 3oz hot water, cool to room temperature. Add all ingredients to a shaker with ice, shake until cold. Double strain over ice. Garnish with a dehydrated apple slice.
VINTAGE II : feat. PJco Blood Orange Marmalade with Rye Whiskey & Vanilla Bean
1 heaping spoonful PJco Blood Orange Marmalade with Rye Whiskey & Vanilla Bean
Add all ingredients to a shaker with ice, shake until cold. Double strain over ice into a rocks glass. Garnish with candied orange peel from PJco marmalade.
VINTAGE III : feat. PJco Strawberry Jam with Pink Peppercorn
1.5oz Watershed Vodka
.5oz Ambrosia Aperitif
.5oz Fresh Lemon Juice
2 heaping spoonful PJco Strawberry Jam with Pink Peppercorn
Tonic Water, we love Fever Tree or Q Tonic
Add first four ingredients to a shaker with ice, shake until cold. Double strain over ice into a highball glass. Top with tonic water. Garnish with a lemon twist.
VINTAGE IV : feat. PJco Rosé Wine Jelly with Rose Petals & Hibiscus
2oz Hibiscus infused Rum
1oz Fresh Lime Juice
.75 oz PJco Rosé Wine Jelly with Rose Petals & Hibiscus
Soda Water, Topo Chico
Add first three ingredients to a shaker with ice, shake until cold. Double strain over ice into a highball glass. Top with soda. Garnish with a lime slice. //// Infused Rum Recipe: 1/4C dried hibiscus : 750mL white rum, rest for 1 hour then strain (OR small batch: 1t dried hibiscus : 2oz white rum, rest for 25 min then strain)
